Happy 40th Birthday Sean! In honor of Sean's birthday I made one of my tried and true pie's. Full of gluten and butter. It was a peach pie - Sean's favorite. He loved it. It has always been so wonderful that Sean enjoys my pie's so much. Definitely is motivating when I am creating something that others enjoy. Celebrating Sean's 40th is a huge part of my 40th. He has been a part of my life for 20 years. It is hard to believe that half our lives have been together. What a gift! I am so grateful for Sean. He is a patient, loving, kind, faithful, hard-working, passionate and a generous husband. A true friend, partner & love.
I have made many a pie crust in my life. I love pie. Since going gluten free about 3 years ago I have yet to perfect the gluten free pie crust. This is one of my quests in turning 40. I also am now dairy free so this adds another layer of challenge in perfecting the pie crust. I definitely think I may need to do some learning on the food science behind gluten free baking.
Crust #1 - failure
Namaste flour blend
Coconut flour (because I ran out of Namaste flour)
Problems: crumbly not able to roll it out, coconut oil was too solid, didn't respond to room temperature very quickly.
I made a Strawberry Rhubarb pie. It was made with rhubarb from my mom's garden, frozen strawberries, coconut palm sugar, earth balance butter spread, vanilla, lemon peel, lemon juice, corn starch.
Thankfully I still have 39 pies to go...
